Wash the mushrooms and roughly chop. Peel the onion and white part of the leek and cut into quarters. Place the mushrooms, onion and leek whites in the bowl fitted with the ultrablade knife.
Add 600 ml of water and season with salt and pepper. Launch the P1 soup program for 25 mins.
At the end of the program, add the crème fraîche and mix at speed 11 for 30 s. Serve hot.
TIP You could add 150 g of bacon or chorizo during cooking for a more rustic soup.
