Place the butter in the bowl fitted with the kneading/grinding tool and melt at 130°C at speed 5 for 3 mins. Add all the other ingredients and launch the P3 pastry program for 2 mins. Chill for at least 2 hrs.
Preheat the oven to 180°C. Butter a madeleine tin and three-quarter fill the moulds (the madeleines will rise during cooking). Bake for 15 mins. Leave to cool before turning out.
TIP You could add vanilla, lemon or even rose extract to the mixture.
